There is one thing my girls love and that’s Annabel Karmel’s Krispie Chicken nuggets! We have made them for years (well since Amelie could eat things like chicken nuggets) and I have always been amazed at how much both our girls and my sister’s little ones love them.
As you may know Amelie and I recently went to film some recipes with Annabel Karmel as I am a brand ambassador for her and we were really excited to try the oven baked version of our favourite recipe. It was also great as Amelie can really help me with the making of these nuggets, she’s such a great help in the kitchen now (where it is safe for her to do so)!

Here is the step by step recipe…
Suitable for Freezing uncooked
Coating
40g Panko breadcrumbs
40g Rice Krispies
25g finely grated parmesan
½ tsp paprika
2 tbsp sunflower oil
2 large chicken breasts cut into cubes
1 egg, beaten
A little plain flour
Preheat the oven to 200C Fan. Grease a baking sheet with oil.
Measure the Rice Krispies and Panko breadcrumbs into a plastic bag. Bash with a rolling pin until finely crushed. Add the cheese, paprika and oil and shake well.
Coat the chicken in flour, then dip into egg and then into the crumb mix.
Arrange the chicken on a baking sheet and bake in the oven for 12 to 15 minutes until golden and cooked through.
MAKES 4 PORTIONS
We made these recently at home and the girls thought they were fantastic and Amelie did a great job making them with me!

What a great idea! I’d heard of using cornflakes but it never occurred to me to use rice Krispies! I’ll give it a go
